Mom’s Rusks

 

Summary: Mom made this all the time while I was growing up. Great with coffee for breakfast.

Ingredients

  • 1 Kg Self Raising Flower
  • 10ml Salt
  • 10ml Baking Powder
  • 2 Cups Brown Sugar
  • 2 Cups Oats
  • 3 Cups All Bran Flakes
  • 250g Raisins
  • 2 Cups Sunflower Seeds or Almonds
  • 2 Eggs
  • 2 Cups Buttermilk
  • 500g Butter,melted

Instructions

  1. Mix dry ingredients together.
  2. Beat eggs and buttermilk together.
  3. Add to dry ingredients and mix to form a dough. Spoon into a large baking dish.
  4. Bake at 180°C for 1 hour.
  5. Cut into rusks and place on foil covered oven racks and dry in 100°C oven for 4-6 hours
